These strawberry energy bites are the perfect last minute healthy snack, breakfast, or dessert. They are are not too sweet and are made with pantry friendly ingredients. These would also make a healthy pink snack on Valentines Day which is coming up soon!

Healthy Strawberry Energy Bites
Ingredients
- 1 cup freeze dried strawberries
- 1 cup sliced almonds
- ½ cup dates or raisins dates are probably sweeter
- 1-2 tbsps water or 2 tsps honey/maple syrup with 1-2 tsp of water if you want them to be a little sweeter
Optional Chocolate Coating
- ⅔ cup dark chocolate chips I used Hu Kitchen paleo and vegan dark chocolate gems but Lily's dark chocolate chips are also a great healthy option
- ½ tsp coconut oil
Instructions
- Add the freeze dried strawberries, sliced almonds, and dates/raisins to a high-speed blender or food processor and blend until the dates/raisins start to make everything stick together a little bit. Add the water (and honey if you wish) and blend until evenly combined. You should be able to squeeze the mixture and it sticks together. If it crumbles then add another a couple teaspoons of water or more as needed. Roll all of the mixture into little ½ tbsp sized balls.
Optional Chocolate Coating:
- If you would like to coat them in chocolate, place the balls in the freezer for 10 minutes. After 10 minutes is up, melt the chocolate and coconut oil in the microwave. Remove the energy bites from the freezer and dunk them into the melted chocolate using a fork. Place the chocolate coated balls on top of a parchment lined tray and place them back into the freezer until the chocolate has set. Store these bites in the fridge and enjoy!
