I just enjoy their cookies and thought I’d use them to create a new sweet treat. I was trying to think of some yummy recipes using the gluten-free Oreos and the only ingredient that kept coming back to my mind was cream cheese. Cream cheese and Oreos make a delicious combination! These bars are basically Oreo-stuffed cream cheese cookies in bar form, and they taste delicious (especially warm)! They are slightly gooey in the center, crisp on the outside, not too sweet, and you get a bit of Oreo in every bite. This is the perfect treat to make for an event or gathering, especially if you want to bring something other than brownies (though they are amazing!). Gluten-Free Oreo Cream Cheese Bars
Ingredients
- ¼ cup unsalted butter room temperature or softened in the microwave (about 15 seconds)
- 4 ounces cream cheese room temperature or softened in the microwave (about 15 seconds)
- 1 cup sugar
- 1 medium-large egg
- 1 ½ tsps vanilla extract
- ½ tsp salt
- ½ tsp baking soda
- 1 ½ cups (222 grams) Bob's Red Mill Gluten-Free 1:1 Baking Flour make sure to fluff up the flour then spoon it into the measuring cup and level it off using the flat side of a knife (or other utensil).
- 16 whole Gluten-Free Oreos
- 4 crushed Gluten-Free Oreos optional for topping
Instructions
- Preheat the oven to 350 degrees fahrenheit (177 celsius). Grease an 8×8 inch square baking pan with oil/butter or line with parchment paper.
- In a large bowl using a hand mixer (or use a stand mixer), cream the butter, cream cheese, and sugar together. Add the egg and vanilla and beat until fluffy. Add the salt, baking soda, and half of the GF flour and beat until combined. Scrape the sides of the bowl with a spatula. Add the rest of the gluten free flour and mix until smooth and fluffy.
- Spoon half of the batter into the prepared baking pan and spread it out evenly. Place four rows of four Oreos across the entire pan (16 Oreos total), to create a layer of the cookies. Spread the rest of the batter on top of the cookies, sprinkle the crushed Oreos over the surface, and bake for 25-35 minutes or until the surface is golden brown. Remove from the oven and let them cool for at least 15 minutes. Slice into bars, serve, and enjoy!
