Butterscotch

Ingredients
  

  • 1 ½ cups powdered sugar
  • 1 cup unsweetened cocoa powder
  • ½ cup (1 stick) unsalted butter
  • 1 cup creamy peanut butter my all-time favorite is Jif Creamy "Natural" Peanut Butter
  • ¼ tsp salt
  • 12 oz butterscotch chips
  • 1 box (340 grams) Chex cereal or any chunkier gluten free cereal

Instructions
 

  • In a very large container, mix the powdered sugar and cocoa powder together.  Scoop out about half of the mixture and dump it into a small bowl.
  • In a small saucepan, heat the butter, peanut butter, and salt together until whisking occasionally until melted, smooth, and hot.  Turn off the heat, add the butterscotch chips, and let it sit for a minute.  After a minute, whisk the mixture until smooth.
  • Pour half of the cereal into a very large bowl, followed by half of the butterscotch mixture.  Add the remaining cereal and melted mixture on top.  Using a spatula, carefully mix until the cereal is evenly coated in the butterscotch mixture.  Add the coated cereal to the large container with the powdered cocoa sugar and sprinkle the remaining cocoa sugar on top.  Tightly close the lid of the container and shake away until the cereal is evenly coated!  If the cereal is still sticky, chill the puppy chow in the fridge for a few minutes or add more powdered sugar little by little until the cereal is coated to your liking.  I chilled mine for about 10 minutes and added an extra ½ cup of powdered sugar.  Enjoy!
